Classic brioche bread recipe

This recipe takes about 40 minutes to prepare, 30 minutes to bake and makes around 2 loaves of bread. So in total, you’re only going to need 1 hour and 10 minutes to make some classic brioche bread!

What do I need to make brioche bread?

  • 2 cups of milk
  • 1 ½ tablespoons of active dry yeast
  • 1 cup of sugar
  • 6 cups of bread flour
  • 6 large eggs
  • 1 tablespoon of vanilla extract
  • 200 grams of unsalted butter (melted)
  • 1 egg and 3 tablespoons of water (For brushing tops)

How to make brioche bread?

Step 1: First prepare all the needed ingredients. We recommend warming up your milk to around 110 Fahrenheit. Warm it up along with the yeast, two cups of flour and sugar then whisk them all together.

Once all the ingredients are incorporated, cover your bowl and set aside to rest. You can use a clean cloth towel or plastic wrap to cover–leave this sitting in a warm area for about a good solid 30 minutes.

Step 2: Get a separate bowl and whisk your eggs. Once whisked add in your vanilla extract and melted butter then mix lightly. After, pour the mixture into the dough bowl from earlier. (Do this after the 30 minute rest.) Then with your remaining 4 cups of flour mix it into the mixture but in small portions.

Step 3: Next, knead the dough until it becomes elastic. You can do this with either your hands or using an electric mixer, whatever works for you. Do this for about 10 to 15 minutes then cover the bowl for about an hour. Leave this to rest so it can rise.

Step 4: After letting it rest, remove the dough from the bowl and divide it into two pieces. With the two pieces of dough, divide them into three equal pieces each. To even them out and elongate them, roll each piece. Then for shaping, connect the ends of each piece then braid them.

Step 5: Get your baking sheets ready by lining them with parchment paper or oiling the pans. Then place your braided brioche dough on the pans 2-3 inches apart. Then using a clean towel, cover them for around 30 minutes again to let them rise. With your egg wash, brush the brioche from time to time.

Step 6: Prep your oven around 350 Fahrenheit and bake your brioche for about 30 minutes. Or if you start to notice it turning into a beautiful golden brown, it’s ready.

What makes brioche bread different from other breads?

What sets this bread apart from the rest is that it contains more butter and eggs. The reason is that it’s more fluffy and light compared to other forms of bread that are multigrain harvest and contain more yeast, flour and water as its base. Yes! Apart from bread flour, you can also use all-purpose flour but expect to have a slight difference in texture. This is because all-purpose flour has less protein which means it’ll develop less gluten. So your brioche bread will just be less chewy, but still delicious!

How long can homemade brioche bread last?

If kept properly, this can last about 4 to 5 days. Remember to keep your egg in a dry area at room temperature. We also recommend you keep it in a plastic bag to maintain its freshness and taste.
